Pina Colada Mimosa DIY

What is warm weather without a cool drink in your hand? Our bartenders recommendation for this week is Pina Colada Mimosa. This is the perfect drink to sip beachside (or poolside) this summer.

INGREDIENTS

  • 1 c. sugar
  • 1 c. pineapple juice
  • 1/2 c. coconut rum
  • 1 bottle prosecco
  • Maraschino cherries, for garnish
  • Pineapple slices, for garnish

DIRECTIONS

  1. In a small dish, pour sugar. Rim glasses with pineapple wedges then dip in sugar.
  2. Pour 1/4 cup pineapple juice and 2 ounces coconut rum into each flute and top with champagne.
  3. Garnish with a pineapple slice and maraschino cherry and serve.
